What to expect
KAI is a single table. 6-8 guests, one sitting, one shared table, one menu. Dinners run 7–10pm.
There are no choices to make at the door. Bookings require at least 72h in advance; last minute requests can be considered, subject to availability.
The menu is set, the pacing is ours, and the evening moves at the rhythm of the kitchen.
What arrives at the table is the result of weeks of testing, sourcing, and refinement — not improvisation.
This is not a restaurant. There is no walk-in, no à la carte, no second seating after yours. The format exists because some food is worth slowing down for. KAI is best suited to guests aged 16 and above, given the length and pace of the tasting format.


The menu
French-Japanese was a discipline exercise — mastering the precision of two exacting culinary traditions in dialogue with each other. It taught what French techniques could do when pushed against a completely different ingredient logic.
But Japan's pantry, as extraordinary as it is, is well-documented. Every serious chef has gone there. The story has been told.
Southeast Asia hasn't been told the same way.
Not with this rigour. The ingredients here — the ones grown an hour from Singapore, the heirloom varieties that never make it to restaurant supply chains, the ferments and aromatics that serious producers are quietly keeping alive — these respond to French technique in ways that are genuinely unexplored. A tribute paid to a territory that truly deserves the attention.
Each KAI menu is a rotation — a chapter built around a specific culinary tradition, season, or place within Southeast Asia. Menus change when the story changes.

Seatings at KAI are by waitlist only. There are no open booking dates at this time.

Bookings are confirmed on receipt of full prepayment only. Cancellations made less than 72 hours before the seating date are non-refundable. Date changes more than 72 hours before are transferable to a future seating date, subject to availability.
